A restaurant specializing in river fish, run by a company involved in all aspects of the business, from raising to processing and selling koi and other river fish. Popular dishes are the koi arai, a sashimi-like dish and koi koku, which is carp cooked in miso soup. Raised in pure water, the carp have a firm sweetness with no unpleasant smell. The restaurant is also popular for its unagi (eel) and, in season, the ayu (sweetfish), yamame (trout), and suppon (soft-shelled turtle).
