Chef Makoto Kusakabe opened this restaurant in 2020 after falling in love with the many foods that are available thanks to the abundance of nature in Itoshima. Much of the seafood he uses is caught locally around Kishi and Himeshima Island, and tokusen honzawara, special Spanish mackerel from Itoshima, may be on the menu in season. The vegetables are organically grown by locally contracted farmers. Enjoy a new narrative in dining through the marriage of Itoshima ingredients and French culinary techniques.
