A bistro developed by the owner-chef to succeed a ristorante he ran on a remote island in Saga Prefecture. Native to that island, Matsushima, the owner-chef uses seafood caught in the Genkai Sea to serve dishes that showcase the natural flavor of the seafood. One recommendation is the whole-fish acqua pazza, made with the day’s catch and plenty of other ingredients. Also try the tasty pasta made with fish/shellfish-steeped soup stock (for an add-on price).
