Senbazuru, which means “a thousand cranes,” delights food lovers with innovative twists on traditional Japanese cuisine. Chef Katsuhiro Nakajima sources seafood primarily from Fukuoka prefecture, infusing each dish with his distinctive ideas and culinary sense. His specialties include hotel-quality wadashimen, a Japanese soup stock ramen, and donabe gohan, rice mixed with seasonal ingredients, cooked in an earthenware pot.
