The owner, Kenji Hanada, uses only fish that he personally catches with a fishing rod or sources from trusted local fishermen. From catch to countertop, he is careful to keep the fish in the freshest condition. The fish he has on the menu will vary from day to day, depending on the sea conditions, etc. He is also open to requests regarding how you like your fish prepared, including seasonings.
