Sushi chef Yoshinori Takayama, born and raised here in the town of Jojima, honed his skills at the famous sushi restaurant, Kawasho. His culinary skills satisfy local customers and connoisseurs alike. He pays special attention to the taste of etsu (Japanese anchovy) dishes, which Jojima natives know intimately. One secret menu item is the gunkanmaki made with etsu roe that will surprise and delight, if you’re lucky enough to have it!
