Everyone who grows up in Munakata loves udon noodles, and this shop is one reason why. The shop has a loyal fan base, having been hand-making and hand-cutting noodles for over 50 years and using a soup stock made exclusively with Rausu kombu from Hokkaido. The shop also cares about seafood, actively using local ingredients such as wild conger eel from Munakata, which boasts the prefecture’s largest summer catch, plus Jinoshima Island wakame, seaweed of such high quality that it is given as a gift to the imperial family via the Munakata Taisha shrine.
