Owner Toshimi Noda personally goes to the Fukuoka Fish Market and other fish markets where he selects the ingredients he will use in his dishes. After honing his skills at fine dining kappo cuisine restaurants in Osaka, Fukuoka, and elsewhere, Noda opened this restaurant in 2013 based on the concept of serving high-end kaiseki dishes à la carte. His delicately prepared sashimi and other standard dishes have many fans, including the Taikotsumen, a noodle dish using fish bone stock made from sea bream.
