Sea bream ramen perfected by a sushi chef

Tai (sea bream) ramen was created by Yoshifumi Nishihara, the second-generation owner of the Ichiriki Sushi restaurant, for the Itoshima Citizens’ Festival in 2016. The soup contains plenty of sea bream from the Itoshima area, a leading fishing ground for madai in Japan. The flavor is rich, with a sharp aftertaste that suits the medium-thick crimped noodles. In place of roast pork, red sea bream is sliced to appear like dry-cured ham. The shop was renovated and reopened in April 2023.
